Ingredients
  

  • 1 lb. Broccoli Florets
  • 3 Tb Garlic minced
  • 5 C Chicken Broth
  • 2 C Heavy Whipping Cream
  • 3 C Cheddar Cheese shredded
  • 6 Slices Bacon baked and crumbled
  • Salt and Pepper to taste

Instructions
 

  • In a large pot, melt the butter and sauté the garlic until tender. Be careful not to burn the garlic.
  • Next pour the broccoli, bacon and chicken broth into the pot and bring to a boil and reduce to simmer for about 10 minutes or until the broccoli is tender.
  • Add the cream and the cheese.
  • Use an emulsion blender and blend the soup for about 30 seconds to make the soup creamier. But don't take away all the florets of the broccoli. You will still want some pieces of the broccoli for some body in the soup.
  • Simmer until you get the desired thickness. (About 20 minutes)
  • Salt and pepper to taste and enjoy!

Saute’ the Garlic

In a large pot, melt the butter and sauté the garlic until tender. Be careful not to burn the garlic. You don’t want bitter garlic in this soup. You want the garlic to be bright and flavorful!

Next add the broccoli, bacon and chicken broth into the pot and bring to a boil and reduce to simmer for about 10 minutes or until the broccoli is tender.

Add the cream and cheese. Use an emulsion blender and blend the soup for about 30 seconds to make the soup creamier. If you do not have a hand held emulsion blender, I would suggest you look into getting one. They are Super Handy (see what I did there….handy…LoL) Check out THIS emulsion blender. Don’t go too crazy with the blender though. You don’t want to take away all the florets of the broccoli. You will still want some pieces of the broccoli for some body in the soup. Simmer until you get the desired thickness. (About 20 minutes) Salt and pepper to taste and enjoy!
