Quick Pie Dough Recipe
This Quick Pie Dough Recipe is just what it says in the title! Perfect for all your homemade pie recipes. Not only is it fast to through together but it is also diverse. It is perfect for your sweet dessert type pies or even your savory comfort food type pies, like chicken pot pie! This recipe makes 2 9-11 inch round pie shells.

Traditional Pie Dough
Equipment
- Food Processor
Ingredients
- 12 Tbsp Unsalted Butter Cubed, Very Cold
- ⅓ C Lard or Vegetable Shortening Very Cold
- 3 C All- Purpose Flour
- 1 Tbsp Sugar
- 1 Tsp Salt
- ¼-½ C Ice Water
Instructions
- Place the flour, sugar, and salt in the food processor fitted with the steel blade attachment. Pulse until combined.
- Add the butter and lard to the food processor and and pulse about 8-12 times until the butter and lard are about the size of peas.
- With the machine running, slowly pour the ice water down the feed tube and pulse the machine until the dough begins to form a ball. You may not need all of the ice water.
- Dump the mixture onto a lightly floured piece of plastic wrap and press into a ball. Wrap in plastic wrap and place in the refrigerator for 30 mins.

Making the Pie Dough
This Pie Dough is quick because you use a food processor to combine the ingredients. But never fear, if you do not own a food processor, you can use a pastry blender, fork, or even your hands to combine the ingredients into a dough.
Notice the ingredients are state VERY COLD! That is the key to a nice flaky pie dough. The colder the ingredients, the flakier the shell. You want the butter and lard to stay in a flaked texture because when you bake the pie shell, it will form little pockets of air and that is what provides the flaky layers.
With the steel blade attachment, combine the flour, sugar, and salt in the food processor. Then add the butter and lard to the food processor and pulsed until the butter is about pea sized. With the machine running, slowly pour the ice water down the feed tube and pulse the machine until the dough begins to form a ball. You may not need all of the ice water. You are just looking for the dough to come together.

Form a Pie Dough Ball
I then lay a piece of plastic wrap down that is lightly floured on the counter. Next, dump the pie dough onto the plastic wrap and form a ball.

Dough Ball
Wrap the dough ball in the plastic wrap and place in the refrigerator for a minimum of 30 minutes. When you are ready to use the dough, just roll it out into the desired shape for your recipe.
If you want to freeze the dough, take the plastic wrapped ball and place it in a zipper bag. This will last in the freezer for 9 months.
